Banoffee Pie

Banoffee pie

My little one has been invited to stay in a friend's house for the whole afternoon and i have the rest of the day to indulge myself. I was torn between preparing something or watch the telly; the former won me over by a mile. This is my first try, so please be gentle with me.

Banoffee pie is an English pastry made of banana, toffee (made out of condensed milk) and biscuit as base. There was a lot of claims as to the origin of this pie/cake. It was claimed invented in 1972 and in 1994 began selling it in supermarkets as American pie.

Ingredients

banana
condensed milk or caramel condensed milk
whipping cream
digestive biscuits
butter

Boil the tin of condensed milk for at least 3 hours to make a gooey toffee of it ( set aside to cool) or alternatively used a ready made caramel condensed milk.

Make a pastry base of digestive biscuits and butter mixed together. Place it on a baking tin and press to make a solid base. Put in the fridge for 1/2 an hour to settle.

Cut the banana in rings and place on top of the pastry. Add the toffee and spread it on top of the banana layer.

Beat the whipping cream in a bowl until stiff and add on top of the cake. Sprinkled with grated chocolate on top. Put in the fridge for few hours to chill and settle.

Eng, that pie sounds and looks delicious! My sister-in-law is from England, living in the States. She always asks if there is anything in particular we want to eat when we visit. I *KNOW* what I will ask for the next time we visit!
